Summer is already here and this week we want to share with you a good and healthy Salad, my brother Carlos’ favorite. He is an athlete who loves sports; he eats very healthy food and takes good care of himself. This is a very complete salad and besides it is very tasty :-) We always want to take care of ourselves, now even more so and this recipe is a good way to start :-) Have a great summer week and we really hope you like our recipe :-)

* 1 bag of assorted lettuce leaves
* 1 avocado
* Several cherry tomatoes
* 5 slices (100 gr.) diced bacon
* 3 1/2 oz. (100 gr.) peeled shrimp
* 1 4 1/2 oz. (125 gr.) package imitation baby eels
* 2 cloves of garlic
* Sherry Cream Vinegar (Balsamic)
* Extra virgin olive oil
* Salt and pepper

* We are going to start by placing the assorted lettuce leaves in a large salad bowl.
* We will chop all the ingredients: the garlic, avocado, bacon, and shrimp, then quarter the tomatoes.
* Add the chopped avocado and cherry tomatoes to the lettuce.
* In a large frying pan or wok, we will add two tablespoons of olive oil and will begin to fry the garlic, then add the shrimp, the bacon bits and also add the imitation baby eels.
* We fry everything until done and then pour this warm sauce on top of the lettuce leaves in the bowl and stir so that they bind together well.
* We add now some drops of Modena Balsamic vinegar and some drops of olive oil and stir and also season.
* And we’re ready to serve the salad at the table and eat while it is warm.

And we promise that this salad will surprise you very much :-) Very tasty! My brother Carlos says that instead of adding cherry tomatoes we can use diced Tangerine segments and it is also very delicious. Have a great week :-)
